Scribble Press - free app that allows students to create books and read them in the ibooks app.

WordSalad is word-cloud creator and a free app (but you might want to spend 99cents to get a watermark-free word cloud). It is like Wordle.net but it works on the iPad when Wordle doesn't. Word clouds can be created, modified, and saved to the camera roll.

Felt Board is a $2.99 app that lets young students create a picture with "felt board" characters, props, settings, and simple words.
